Dr. John Erdman is a professor in the Department of Food Science and Human Nutrition. He earned his PhD in 1975 at Rutgers University in New Jersey. His research interests include nutritional and physiological biochemistry of humans and animals; nutrition and cancer; biological effects of carotenoids and vitamin A; soy protein and lipid metabolism; weight loss and control. He serves as the deputy director and is also the chair for the Interdisciplinary Health Sciences Initiative Advisory Board.
